Raspberry Daiquiri

Aim

To create the classic rum sour drink with just the right amount of sweetness to showcase the delicate balance of sweet and sour while retaining the beautiful spiced pineapple flavours but with a delicious fruity twist from the raspberry.

Shaker
Hawthorne Strainer
Fine Mesh Strainer
Muddler
Coupe glass

Materials

60ml Pineapple Elixir Rum
30ml Freshly Squeezed Lime Juice
15ml Homemade Simple Syrup
1 Handful Fresh Raspberries
1 Lime slice to garnish

2 Oz Pineapple Elixir Rum
1 Oz Freshly Squeezed Lime Juice
0.2 Oz Homemade Simple Syrup
1 Handful Fresh Raspberries
1 Lime slice to garnish

Method

Add the raspberries to the cocktail shaker and muddle.
Add the rum, lime juice, simple syrup and plenty of ice to a cocktail shaker.
Shake vigorously for 10 seconds or until frothy.
Strain into a chilled glass.

Results

The classic rum cocktail, sweet with the raw freshness of sugar and lime with the fresh raspberries and the delicious pineapple notes.
