Ingredients

  • 60ml Pineapple Elixir
  • 12 Fresh Mint Leaves
  • 2 Lime Wedges
  • 2 tsp Raw Demerara Sugar
  • Chilled Soda Water
  • Sprig of Fresh Mint to garnish
  • 2oz Pineapple Elixir
  • 12 Fresh Mint Leaves
  • 2 Lime Wedges
  • 2 tsp Raw Demerara Sugar
  • Chilled Soda Water
  • Sprig of Fresh Mint to garnish

Method

  1. Add lime wedges and sugar to a highball glass and muddle firmly.
  2. Add the mint leaves and muddle gently.
  3. Fill the glass 3/4 full with ice.
  4. Add Pineapple Elixir and stir.
  5. Top-up with ice and fill to the brim with chilled soda water.
  6. Garnish with a sprig of mint.
