Ingredients
- 60ml Pineapple Elixir
- 12 Fresh Mint Leaves
- 2 Lime Wedges
- 2 tsp Raw Demerara Sugar
- Chilled Soda Water
- Sprig of Fresh Mint to garnish
- 2oz Pineapple Elixir
- 12 Fresh Mint Leaves
- 2 Lime Wedges
- 2 tsp Raw Demerara Sugar
- Chilled Soda Water
- Sprig of Fresh Mint to garnish
Method
- Add lime wedges and sugar to a highball glass and muddle firmly.
- Add the mint leaves and muddle gently.
- Fill the glass 3/4 full with ice.
- Add Pineapple Elixir and stir.
- Top-up with ice and fill to the brim with chilled soda water.
- Garnish with a sprig of mint.
